Easy Healthy Weeknight Meals!

We all have those days, you know the ones where Monday just kicked your butt gluteus maximus and the last thing you want to do is stand in the kitchen cook and clean up….ugh. I struggle weekly to come up with simple healthy meals that I can make in a jiffy and not feel like a slave to my kitchen. Not to mention my daily salad routine was getting old… apparently I’m not as creative in the kitchen as I thought I was.

Now enter my unhealthy obsession with Pinterest. Seriously, it just changed the dinner game for me!

I started following Real Simple Magazine’s Pinterest boards which are chock-full of great home tips, DIY’s, and the holy grail of simple recipes all in one place: the Weeknight Meals board!

So many options to choose from and every recipe I’ve tried has taken me 30mins or less! Of course I make sure my ingredients are top notch using things like organic chicken, organic GMO-Free vegetables and organic grass-fed beef. I’m also not afraid to make vegetable switches depending on what I have fresh, even if the recipe doesn’t call for it.

Also a great feature, every Real Simple recipe offers nutritional information, so it makes sticking to your diet easy peasy. Needless to say, this board has helped me whip up some great meals!

Here are my top 3 favorite recipes so far:

Grilled Chicken and Corn Salad with Avocado and Parmesan – seriously yummy! This salad is like summer in a bowl!

 

Skirt Steak and Potatoes with Herb Sauce – What can I say, I’m a steak and potatoes type of gal! With this easy and flavorful recipe I’m not limited to steak on just the weekends any more.

 

Cold Pesto Pasta Salad – I’m a big fan of arugula, goat cheese and pesto… put it all together in a simple salad and its perfection!
